Everyone always asks about the food, and this is what we tell them:

  1. It's good!
  2. It's as local and organic and sustainable as is humanly possible. We run an aggressive composting program, we go trayless, and a lot of our produce comes from local farms, including our own student-run Knox Farm.
  3. It's student-inspired. Our students come from around the world—so we make recipes from around the world. Some of our students are vegan, or vegetarian, or on restricted diets—so we make recipes to meet their needs.
  4. It's got a certain Knox-y character to it. We're thinking of cookouts on the patio of the Gizmo, Student Senate popcorn, the student recipe swap, and—very important—the Dessert Cave.
